When Jess took Rory's bracelet, it wasn't about stealing something that Dean gave her. Oh, I totally agree! I think he had a crush and like you said, wanted something of her's. IT probably would've actively put him off to know Dean gave it to her, and it was a shame Lorelai immediately jumped to the worst conclusions when she found him returning it.
